Garden Harmony Soup

Ingredients

1 onion, finely chopped 

¼ cup (60 mL) extra-virgin olive oil 

2 cloves garlic, minced 

4 cups (1000 mL) potatoes, chopped 

2 cups (500 mL) tomatoes, chopped 

2 cups (500 mL) carrots, diced 

8 stalks celery, diced 

4 cups (1000 mL) water or broth 

1 tsp (5 mL) rosemary & thyme 

2 Tbsp (30 mL) lemon juice 

1 Tbsp (15 mL) salt 

2 cups (500 mL) spinach, finely chopped (add at the end just to wilt)

Instructions 

In a saucepan, sauté the onion for 5 minutes in olive oil then add the garlic, potatoes, tomatoes and carrots and fry over medium heat until vegetables are softened. 

Add the water/broth. Bring to a boil. 

Reduce to a simmer and add the rosemary, thyme, lemon juice and salt. Cook until the vegetables are soft.

Add spinach and heat 1-2 minute just to wilt it. Serve.
